If you are anything like me, you spend a good part of the day thinking about food. It's not the eating of the food that most intrigues me, although that is often the climax. I like the process that leads up to eating almost as much as the experience of eating itself. I find a direction and I run with it, taking it as far as my budget and imagination will allow. Recently I found my new obsession- cheese.
Having grown up partially on a farm, I was used to being around cows, fresh milk, fresh butter, cream and cheese. It was just part of the routine of life that I appreciated, but never paid much attention to. What led me back to cheese making was another fact of farm life- waste nothing. So often I purchase milk for a recipe only to find myself stuck with 3/4 of a 1/2 gallon that goes bad after a few days. Finally, I had enough. What to do with this leftover milk? Well, why not cheese?
First up: Ricotta.
